Making sweets with your own hands is quite easy, but rather a pleasant and fascinating occupation that allows you to create not only a delicious home-made dessert, but also an original delicacy that can be turned into a pleasant gift for your friends or loved ones.

The best part is that homemade candies can be supplemented with any filling you like, give them the necessary shape, as well as experiment with unusual combinations of tastes.

We, of course, do not offer you to repeat something like that, but everyone can try to cook candies according to more classical schemes.

The history of the first candies originates more than three thousand years ago, at that time people did not know what sugar and chocolate were, but they prepared not less tasty sweets from honey, nuts and dates. Candies, which more or less resembled their modern brethren, first appeared in Italy in the 16th century, however, they were not used as a tasty dessert, but rather as drugs, and were sold in pharmacies.

It was quickly noticed that such “drugs” did not have any healing effect, therefore they were quickly slandered and, for a while, chocolates tried not to be eaten. Up to the 19th century, not a single confectionery factory existed in Russia at all; chocolates were exclusively imported goods, which, naturally, only rich people could afford.

The most important thing to remember is the observance of the correct melting point of chocolate, because it is the main component of the tasty result.

Chocolate reacts poorly to very stuffy and hot rooms, so you need to work with it at room temperature no more than 20 °.

To make the finished candy with a beautiful and pleasant glossy shine, and not with a dull and whitish bloom, you need to follow the melting technology: dark chocolate is heated to a maximum of 50 °, after which the temperature must be reduced to 32 °. The same applies to the dairy and white varieties, only the temperature should be reduced to 30 ° and 28 °, respectively.

The next important point that must be observed for a successful result: to protect the molds and the chocolate mass itself from the possible ingress of moisture!

The fact is that even the smallest drop of water that happened to be in the chocolate mass will cause it to crystallize, which means that we will not get quality candy.

A bit of practicality and you will be a master

To create chocolates, most often, they use tiled chocolate, chocolate in drops, which, by the way, is most conveniently smelted, or ordinary chocolates without fillers. Melting it is best in a water bath or in a microwave, but in the latter case, you risk overheating.

To melt chocolate directly in a bowl on the fire is not the best option, as it can easily burn and spoil the taste of candy.

Chocolate Truffle Recipe

Mysterious candies from France, which are specially made in such a way that they resemble real truffles, it is for this they are given a special form and sprinkled with chocolate shavings that mimic the earth.

Such sweets are usually prepared according to a standard recipe from a mixture of butter, chocolate and cream, and already at the request there you can add spices, candied fruits, liqueurs, nuts or dried fruits. So, we will need:

  • chopped chocolate - 230 g;
  • cream - 0.5 cups;
  • liqueur - 1 tbsp. a spoon;
  • unsalted butter - 30 g;
  • cocoa powder, nuts.

Chopped or chopped chocolate is put in a bowl, preferably heat-resistant, and for the time being set aside. Cream mix with oil and heat in a small container over medium heat until boiling. Then pour the hot mixture onto the prepared chocolate and let stand for a few minutes.

Now mix everything with a whisk until a homogeneous mass is formed, add a tablespoon of liqueur (you can choose any alcohol, for example, rum, brandy or bourbon). It is necessary to cover our prepared chocolate mass with a lid and leave it in the fridge for a night, it should thicken well.

The next day, take out the chocolate preparation and take the hands or a spoon for ice cream to form small balls of irregular shape. Choose the option of powder, if it is chocolate and finely chopped nuts, then sprinkle them with candy and spread them on a baking sheet, covered with parchment paper. Cover our candy with a lid and send them in the fridge until it solidifies.

Cooking delicious raphaelo at home

It turns outeveryone's favorite and incredibly delicious Rafaelo sweets can be prepared at home, and the process itself is quite simple. So what do we need?

  • condensed milk - 1 bank;
  • butter - 200 g;
  • coconut chips - 200 g;
  • Almond - 100 g

Mix melted butter with condensed milk, add half of coconut shavings. The resulting mass must be whipped up to the formation of a thick cream, which then must be covered with a lid and send brewed overnight in the refrigerator.

When the mass is frozen, you can start forming small balls, inside of which we place on the amygdala. Ready candies sprinkle the remaining coconut chips and send in the fridge until it hardens.
