- Serves: 9
½ cup white sugar
½ teaspoon baking powder
1½ cups all-purpose flour
¼ teaspoon salt
½ cup (8 tablespoons, 1 stick) cold butter
1 egg, beaten
1 teaspoon vanilla extract
2 cups fresh strawberries
⅓ cup white sugar
2 teaspoons cornstarch
Prepare to make the bars.Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius). Grease and flour an 8 x 8 baking tray, or use parchment paper on the bottom as an alternative.
Slice the strawberries. On a cutting board, slice the strawberries in thin slices and place them in a colander. Rinse well with water and shake colander to remove any excess water. Set aside.
Mix the sugar, flour, baking power, and salt.In a medium-sized bowl, whisk the sugar, flour, baking powder, and salt. Mix until well-combined.
Add the egg and vanilla into the dry ingredients mixture. In a small bowl, use a whisk or fork to beat the egg. Slowly pour the beaten egg and vanilla extract into the dry ingredients mixture.
Add the butter to make the dough.Using a pastry cutter, add the butter in with the dry ingredients and blend until the mixture is crumbly and resembles a dough. Keep blending until the butter is in very tiny pieces. Place half of the crumbly dough on the baking tray and gently pat with a wooden spoon.
Make the strawberry mixture. In a separate medium bowl, mix the strawberries, sugar, and cornstarch using a wooden spoon. Stir until properly mixed and the strawberries are slightly white and resemble a pink color. Spread the mixture on the baking tray and gently spread it around with the wooden spoon. Add the rest of the crumbled dough over the strawberries.
Bake the strawberry bars.Place the baking tray in the oven and have it bake for about 45 minutes, until the edges and top are golden brown and slightly crispy.
Serve.Have the bars cool for about five minutes and slice into squares. Serve on a serving plate.
- Ensure the butter is very cold or the dough will not form for the bars.
- You can also use frozen strawberries that have been thawed for these bars; however, fresh work and taste best.
- These bars can last up to two days if covered tightly with plastic wrap in the fridge.
- If the butter is not cold, the bars will not come out as a buttery crumb crust.
- Take caution not to under-bake the bars. They need a little more time to bake and will taste doughy if removed too early. Only remove them from the oven when the top becomes golden brown.
