Mojito Fruit Ice

You will need
  • - 4 limes;
  • - 230 ml of water;
  • - 100 ml of lime juice;
  • - 90 g brown sugar;
  • - 50 g of mint, light rum;
  • - zest from two limes;
  • - 1 egg white.
Rinse well with fresh mint and limes. Grind mint until smooth using a blender.
Sugar mixed with lime zest, water. Boil the syrup, add the chopped mint and lime juice (100 ml), let it stand for thirty minutes.
Add rum, you can add sugar, although it is better not to make this fruit ice too sweet.
Beat the whites to a strong foam, mix with the mint-lime syrup, remove for three hours in the freezer, stir every half hour. Do not be afraid that the protein will first be on the surface, then it will turn into a fluffy homogeneous mass.
With four limes, cut off the top, carefully remove the pulp with a spoon. Slightly trim the bottom so that the baskets stand steadily, fill them with fruit ice. Keep in the fridge, reach for the dessert just before it is consumed.
