Polish Pani Walewska - a delicious and matchless cake

Pani Walewska is a delicious Polish pastry that is something between a cake and a pie. Plyatski are different in color and taste, but always amaze the imagination with its colorful cut, crispy meringue and crumbly shortcrust pastry.

Ingredients for the dough:

  • flour - 250 gr
  • baking powder - 1 tsp
  • sugar - 50 gr
  • butter - 100 gr
  • 3 yolks

Ingredients for meringue:

  • squirrels - 4 pcs
  • icing sugar - 125 gr
  • starch - half Art. spoons

Ingredients for cream:

  • flour - 1 tbsp. a spoon
  • starch - 1 tbsp. a spoon
  • milk - 250 ml
  • sugar - 50 gr
  • Yolks - 2 pieces
  • vanilla sugar - 1 bag
  • butter - 100 gr

Ingredients for the filling:

  • petals of almonds - 60 gr
  • frozen berries or jam - 225 gr

Cooking:

1. First you need to prepare the cake layers - mix 200 grams of flour with butter at room temperature. Add yolks with baking powder. Knead the dough, gradually add 50 gr of flour.

2. Make a baking sheet with parchment.Roll out the dough, wrap it on a rolling pin and transfer it to a baking dish. You will get a thin layer of dough over the entire surface of the form.

3. Spread frozen berries or jam over the entire surface of the dough.

4. For meringue, whip proteins with powdered sugar. Stir, gradually adding starch. Lay the resulting meringue on frozen berries on the entire surface of the mold. At will - you can sprinkle with chopped nuts or almond petals.

5. Bake the cake in the oven for 40 minutes at 180 degrees.

6. Getting to the preparation of the cream - in a small saucepan, pour in the milk and add the remaining ingredients. Boil the cream until the mass thickens.

7. Beat the butter well and gradually add to the cooled cream, without stopping to beat. If the cream turns into lumps, whisk it with a blender.

8. Cut the finished cake in two. Smear one piece with cream and cover with the other half.

9. Send the pastry to the refrigerator for a couple of hours. When serving, cut the cake into pieces.
